Ingredients

  • 1 Tbs extra-virgin olive oil
  • 1 small onion , chopped
  • 2-4 cloves garlic
  • 1 med zucchini , chopped
  • 6-8 baby portabella mushrooms
  • 1 cup black beans
  • 1 cup cherry tomatoes , halved
  • ¾ cup corn
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Juice of one lime
  • Tortillas (corn or flour)

For topping

  • Fresh Salsa
  • Fresh cilantro
  • Sour cream
  • grated cheese

Instructions

  1. Heat olive oil in a large skillet.
  2. Add the onion and sauté until translucent or about 5 minutes.
  3. Add the garlic, veggies, and spices. Sauté until zucchini is soft and remove from heat.
  4. Squeeze the lime over veggies.
  5. Build your taco and enjoy!
