Lighten’ up the leftovers

After Thanksgiving lunches do not have to be all sandwhiches, soup and cold turkey.  This Turkey Salad is great just as is, served over mixed greens or on toast, or made into a delicious wrap.

Turkey Salad

light, easy, and great for the go

Ingredients

  • 2 cups finely chopped turkey breast
  • 1/4 cup chopped apple
  • 1/4 cup grapes
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1/4 cup chopped walnuts optional
  • 2 to 3 tbsp mayonnaise
  • 2 to 3 tbsp plain Greek yogurt
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Combine mayo, yogurt, salt and pepper, mix well.
  2. Add remaining ingredients and mix until everything is evenly coated.
  3. Cover and refrigerate for an hour.
  4. Serve and enjoy

Lets start with something that uses more then just the turkey today. 

These roasted cranberry turkey sweet potato skins are a great dinner for the day after!

Turkey & Cranberry Sweet Potato Skins

Ingredients

  • 2 smallish medium sweet potatoes previously baked & hollowed out
  • 1/8 tsp 1g salt
  • 4 c 120g fresh spinach, chopped
  • ½ c 53g fresh cranberries, diced
  • 12 oz grilled turkey breast diced
  • 2 tbsp 14g finely shredded mozzarella

Instructions

  1. Preheat the oven to 375°F, and line a baking sheet with foil. Lightly coat the foil with nonstick cooking spray. Place the 4 sweet potato halves skin side up, and lightly coat with nonstick cooking spray.
  2. Sprinkle with the salt. Bake at 375°F for 15 minutes.
  3. While the sweet potato skins bake, prepare the filling. Lightly coat a large pan with nonstick cooking spray, and briefly preheat over medium-low heat. Add the spinach, and sauté until it has wilted. Add in the cranberries and turkey, and continue to sauté until they’re warmed through.
  4. Flip over the sweet potato skins, and divide the filling between them. Top each with 1 ½ teaspoons of mozzarella. Bake at 375°F for 7-10 minutes, or until the cheese has melted. Cool on the pan for 1-2 minutes before serving.
  5. Enjoy!

We often have GREAT ideas.  Wonderful ideals about how we want to live our life.  We make plans, set goals, and begin creating new habits.

And then reality sets in.  Life happens and new routines are much harder to create.  All the great goals get pushed back, softened and left behind.  We accept that life is hard and changing is harder and maybe next time we will have better luck.  

Well the year is almost over.  Did you keep to your New Year’s resolutions?  Did you lose that ten pounds?  Did you quit smoking?  

Give yourself credit where credit is due and learn from your mistakes.

Set realistic goals and make small changes instead of sweeping great change through your life.  This go round plan for step-by-step goals that are achievable and sustaining.  Don’t forget to ask for help, you don’t have to do it alone.

Making Your Routine

All too often we feel the need to conform especially when it comes to how we spend our time.  The notion of the 9-5 day is still strong and many feel that they must fit their life into that schedule, and for some that works just fine.  However in this modern-day and age that 9-5 schedule is not so realistic for many of us.  You must find a routine that works for you, and not let conformity drive you.

Start by taking a look at your life.  Work seems to be a driving factor for many of us so start there.  Next, take into account your sleeping.  The idea of an 8-hour sleeping cycle only works if you are sleeping when you were actually tired, and if you have the time to set aside for that.  You also have to take into consideration that not everyone sleeps for 8 hours straight.  Think about what time you actually get tired at and what time your body naturally wakes up. This should be the time you schedule for sleeping.

Next, take into account all the other responsibilities you have, and when you’re most productive time is.  For some people it’s best to write everything down, others take on a trial-and-error method.  The idea is to make a routine that works for you and stop conforming to the social norm.  You will find that this will make you much more productive and feel more successful.  

Hello and nice to meet you

           Before you can choose a holistic coach you have to know a little about them.  I want to take some time to share about myself.

           Born and raised in Colorado I find the mountains are my home.  I love being in nature and watching the animals; although I am probably one of the very few people who have never been skiing.  I knew as a young child that I wanted to be a health care provider.  In third grade I wanted to be a OBGYN and started reading about the body.  Soon I learned that not everyone services birth I quickly decided that I could not do that.  I transferred my focus to being a teacher and some day a mom.  

           My first job was at a daycare and I loved the toddler room.  I was hooked and spent the next 10 years focused on dedicating myself to the classroom.  I received an associates in Early Childhood Education and a second in Daycare management.  I worked in Denver with toddlers until 2007 when I moved to Greeley.  With the move I also made a change in my career.  

           I started going to school for nursing but quickly realized that was not right for me.  My first nutrition class peaked my curiosity and I had to learn more.  I changed my major and focused on learning about all the intricate pieces of the digestive system.   

           Soon after my move I met my husband, and again my focus changed.  We had our first child in 2011 and she became my full-time job.  Over the next 5 years we had two more kids, I graduated with my bachelors of science in Nutrition and Dietetics, and started counseling people.  

           My goal now is to build a privet practice helping those in my community achieve their goals and find better health. My passion is helping people realize their own potential and do the things they want to do.
