In a large frying pan add olive oil and onion and cook in medium high heat until the onion is soft
Add curry paste and fry for 1 min.
Add the milk, sweet potato, pepper and chickpeas and simmer for approx. 15 minutes until potatoes are soft.
Add spinach in small handfuls mixing before adding another handful.
Simmer on medium heat for 2-5 minutes until the spinach is soft.
Serve and enjoy!
