Simple Smoked Salmon Salad

Ingredients

For Salad:

  • 1 avocado pitted, peeled, and diced
  • 4 oz smoked salmon
  • 2 cucumbers peeled and sliced
  • 3-4 C baby spinach
  • ¾ C fresh blueberries
  • 1/4 C red onions thinly sliced
  • 1/4 C Pistachios rough chopped

For dressing:

  • ¼ C Olive oil
  • Juice of ½ a lemon
  • 2 tsp Dijon mustard
  • Sea salt & pepper to taste

Instructions

  1. In a large bowl mix the salad ingredients.
  2. In a small bowl combine the dressing ingredients and whisk well.
  3. Pour dressing over salad and enjoy.
