These muffins are an excellent change up to the same old blueberry muffins. Plus the keep well, and are a packed with nutrients.

Peanut Butter Banana Muffins

Ingredients
- 2 cups whole-wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground cinnamon
- 4 large ripe bananas mashed
- 1/4 cup packed light brown sugar
- 1/4 cup honey
- 1 Tbsp. oil
- 1 lg egg
- 2 tsp. vanilla extract
- 1/4 cup creamy peanut butter
- 1/2 cup milk can substitute almond or other nut milk
Instructions

Preheat the oven to 350* F. Line a muffin pan with paper liners and set aside.

In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.

Place the mashed bananas in the bowl of a stand mixer. Add the brown sugar, honey, oil, egg, vanilla and beat until combined. Add in the peanut butter and beat until smooth.

Add the flour mixture and milk alternately. Mix until just combined. Don’t over-mix.

Fill muffin liners three-quarters full.

Cook until a toothpick inserted into center comes out clean, about 20-22 minutes.

Transfer to wire rack to cool at least 10 minutes before eating.
