This quick, and easy one skillet dinner is packed with fresh flavors!
Harvest Chicken Skillet

Ingredients
- 2 Tbs olive oil
- 1 pound chicken boneless, skinless, cut into pieces
- 1/3 C sun-dried tomatoes drained of oil, chopped
- 1 lb asparagus ends trimmed chopped
- 2 Tbs basil pesto
- 1/4 C sherry cooking wine
- 1 C cherry tomatoes any color cut in half
- Salt and pepper to taste
- 1/4 C Fresh Basil
Instructions

Add oil to a large skillet and heat on medium.

Salt and pepper the chicken

Once oil is hot add chicken and sun dried tomatoes to the pan. Stirring regularly cook over medium for 8-10 minutes until chicken is cooked through.

Add asparagus and cook 1 or 2 minutes.

Turn heat to medium low. Add the pesto and wine to the pan mixing well. Cooking until sauce is consistent and thickens slightly.

Remove the pan from heat and add cherry tomatoes and basil gently mixing to combine.

Pour into a serving dish and enjoy family style!
