BBQ Stuffed Potatoes

Ingredients

  • 2 Large Potatoes
  • 2 tbs butter
  • BBQ sauce
  • 4 chicken thighs
  • Green onions
  • Shredded cheddar cheese

Instructions

  1. Slice potato in half.
  2. Preheat oven to 350°
  3. Place potatoes on baking sheet and top each on with 1/2 tbs butter, and cook for 15 minutes.
  4. Meanwhile place chicken in boiling water and boil until cooked through, about 10 minutes, and drain water.
  5. Allow to cool for a few minutes and then clean meat from the bone, placing the meat back in the pan.
  6. Add BBQ sauce and mix until chicken is covered.

  7. Remove potatoes from the oven and top with chicken mixture, place potatoes back into the oven and cook until potatoes is tender, about 10 minutes. To help with clean up you can place a piece of foil under the potatoes.

  8. Top with cheddar cheese and allow to cook for 3-5 more minutes, remove from oven and allow a few moments to cool.

  9. Top with sour cream and green onions.

  10. Serve warm and enjoy!
