Summer time is hot and a nice cool lunch or side dish is always enjoyed. This pasta salad dish is an easy show stopper! Plus the pesto sauce can be used on many other dishes and is light and refreshing!

Tomato Pesto Pasta Salad

Ingredients

  • 5 C Basil
  • 3/4 C Parmesan Cheese
  • 4 Garlic cloves
  • 1 TBSP Lemon Juice
  • 1/2 C Extra virgin olive oil
  • 1 Box Rotini Noodles or desired small noodle
  • 1 pt Cherry Tomatoes sliced in half
  • 3/4 C fresh Mozzarella balls or diced

Instructions

  1. Cook noodles according to the package.
  2. In a food processor, blend Parmesan cheese, oil, garlic, and basil until pureed.
  3. Set pesto in the fridge to chill and allow the flavors to come together.
  4. Once pasta is cooked, rinse with cold water to chill noodles.
  5. Add your cherry tomatoes, fresh mozzarella balls, and pesto mix thoroughly.
  6. Garnish with extra basil leaves before serving.
