This nutrient dense and flavor packed soup makes a great lunch to go, a fantastic family dinner or for any meal in-between
Sweet Potato Curry Soup

Ingredients
- 2-3 tablespoons curry paste
- 1 medium onion diced
- 4 medium sweet potatoes peeled and chopped
- 1 red pepper- sliced
- 1 tin of chickpeas or other white beans
- 200 g bag of spinach
- 12 oz coconut milk or other milk
Instructions

In a large frying pan add olive oil and onion and cook in medium high heat until the onion is soft

Add curry paste and fry for 1 min.

Add the milk, sweet potato, pepper and chickpeas and simmer for approx. 15 minutes until potatoes are soft.

Add spinach in small handfuls mixing before adding another handful.

Simmer on medium heat for 2-5 minutes until the spinach is soft.

Serve and enjoy!
Recipe Notes
Freeze left over portions in individual bags, making it easy to reheat individual servings. You can also use a food processor to puree the soup to create a creamy texture
