Simple Smoked Salmon Salad

Ingredients
For Salad:
- 1 avocado pitted, peeled, and diced
- 4 oz smoked salmon
- 2 cucumbers peeled and sliced
- 3-4 C baby spinach
- ¾ C fresh blueberries
- 1/4 C red onions thinly sliced
- 1/4 C Pistachios rough chopped
For dressing:
- ¼ C Olive oil
- Juice of ½ a lemon
- 2 tsp Dijon mustard
- Sea salt & pepper to taste

In a large bowl mix the salad ingredients.
