Snacks can be a trigger for junk food. It is so easy to just grab a snack bag of our favorite treats and fill our bellies. Too often that is the downfall of our healthy eating habits. There are great options out there but they are not always easy or delicious.

These Apple Snack Balls are easy to make, keep in the fridge for a week, and are easy to eat when you are ready for a great snack.

Packed Apple Snack Balls

Ingredients

  • 1/2 C peanut butter
  • 2 TBSP ground flax seed
  • 1/4 C dried cranberries or cherries
  • 1 C quick-cooking oats instant oats
  • 1/2 medium apple roughly chopped
  • 1 tsp cinnamon
  • 2 tsp honey optional

Instructions

  1. Place all ingredients in a food processor and pulse until they come together to form a dough-like texture. If the mixture is still crumbly, add 1-2 tablespoons water and pulse until it comes together.
  2. Scoop the mixture out one tablespoon at a time and roll to make each snack bite round in shape.
  3. Place in an air-tight container with parchment or plastic wrap between layers of the snack bites and store in the refrigerator up to one week.
