We are all familiar with blueberry and banana muffins. The sweet treat for breakfast can be a favorite however sometimes its something savory you crave in the morning. These savory muffins are nutritious and delicious. They are great for breakfast, snack, or on the go!
Spinach and Feta Muffins
Makes 24 Muffins

Ingredients
- 2½ C self-raising flour
- 1 C fresh spinach shredded
- 3/4 C feta cheese
- ½ C Julienned sundried tomatoes chopped
- ¼ cup Kalamata olives sliced
- 2 Tbsp parmesan
- 1⅓ C milk
- ¼ C melted butter
- 1 egg
Instructions

Preheat oven to 400° F and line muffin tins with liners.

Sift the flour into a large bowl.

Add shredded spinach, crumbled feta cheese, chopped sundried tomatoes, olives, and parmesan mixing to combine.

In a separate bowl, whisk together the melted butter, milk and egg until just combined and add to the dry ingredients.

Mix until the ingredients come together.

Spoon 3 Tbsp of the mixture into prepared pans.

Bake for 20 minutes, or until a toothpick comes out clean.

Remove from pan and place on a wire rack to cool.

Serve warm with some butter and enjoy!
