Deliciously Dark Breakfast Cookies

peanut or almond butter

Preheat oven to 350ºF.

In a bowl, combine the dry ingredients

In a separate bowl or standing mixer with the paddle attachment cream the eggs, mixing on high speed until light yellow.

Gradually add butter and mix until consistent.

Add applesauce and nut butter. Mix on medium high until consistent.

In two or three batches add the dry ingredients to the wet until a dough is formed.

Add in Chocolate chips.

Using a large table spoon, scoop 16 cookies onto a parchment paper lined cookie sheet.

Bake for 8 to 10 minutes or until the edges start to change color.

Serve and enjoy!
These are easy to make ahead and keep for a week in an air tight container.
