I am always looking for a new way to serve up our favorite vegetable to grow, potatoes! This recipe is great for lunch, dinner, or an appetizer and can spice up any meal. Plus this is super easy to make and clean up!

Spicy chicken potato skins
Crunchy, Spicy, savory and delicious!

Ingredients
- 2 large potatoes Russet or Golden
- 2 TBSP butter
- Salt and Pepper to taste
- 2 chicken breasts cooked and shredded
- 2 TBSP Frank’s Red Hot Buffalo Wing Sauce
- 1 TBSP Olive oil
- ¼ C cheddar cheese shredded
- ¼ C blue cheese crumbled
- 2 Carrots shredded
Instructions

Wash potatoes and pat them dry. Cut in half lengthwise and place them in a shallow baking dish. Add a 1/2 TBSP butter to each one and salt and pepper to taste and cover with foil. Bake for 20-30 minutes or until the potatoes are soft.

In the meantime shred the chicken and toss it with the buffalo wing sauce.

Once potatoes are soft Scoop out the potato flesh placing it in a bowl and mashing it.

Turn the broiler on.

Brush potato skins on both sides with olive oil and place under the broiler for a few minutes until they’re nice and crisp.

Remove from the oven and add the mashed potatoes back to the skins and top with even amounts of chicken and place back under the broiler for 2-4 minutes warming chicken.

Remove from oven and top with the cheeses and place under the broiler for a couple more minutes until the cheese is melted.

Top with the shredded carrots, serve and envoy!
