Ingredients

  • 1 pint of cherry tomatoes
  • 2 tbsp extra virgin olive oil
  • juice of half a lemon
  • 1 tsp chopped garlic
  • 2 tbsp chopped red onions
  • fresh parsley chopped
  • salt and pepper to taste

Instructions

  1. Place cherry tomatoes (cut in half), red onions, garlic, and fresh parsley into a large salad bowl.
  2. Drizzle with 2 tbsp of extra virgin olive oil and the juice of half a lemon.
  3. Toss gently to combine.
  4. Right before serving, season with salt and pepper to taste.
  5. Enjoy!

You can add feta or fresh mozzarella, and for a little protein chicken is a great bonus.
