This is a super easy and quick salad that is great as a meal, snack, or appetizer
Quick Tomato Salad

Ingredients
- 1 pint of cherry tomatoes
- 2 tbsp extra virgin olive oil
- juice of half a lemon
- 1 tsp chopped garlic
- 2 tbsp chopped red onions
- fresh parsley chopped
- salt and pepper to taste
Instructions

Place cherry tomatoes (cut in half), red onions, garlic, and fresh parsley into a large salad bowl.

Drizzle with 2 tbsp of extra virgin olive oil and the juice of half a lemon.

Toss gently to combine.

Right before serving, season with salt and pepper to taste.

You can add feta or fresh mozzarella, and for a little protein chicken is a great bonus.
