This healthy take on traditional mac & cheese kicks up the flavor and adds a nutrient dense punch to that ageless classic!

Pesto Mac and Cheese

Ingredients
- 2 1/2 C pasta
- 3 Tbs butter
- 3 Tbs plain flour
- 500 ml milk
- Salt and Black pepper to taste
- Pinch nutmeg
- 2.5 oz 2/3 C cheddar cheese, grated 2/3 C, grated
- 2 tbsp fresh basil
- 3 tbsp fresh parsley
- 40 g fresh spinach
Instructions

Boil the pasta according to the instructions on the packet.

Meanwhile, melt the butter in a saucepan, and add the flour. Mix well to form a paste, and cook over a low heat for a couple of minutes, stirring constantly.

Once the flour rue has started to deepen in color, slowly add the milk and wisk until smooth.

Add salt, black pepper and a generous pinch of nutmeg, mixing well.

Add the grated cheese, and cook for a couple more minutes until it has melted.

Meanwhile, Place the spinach, basil and parsley in a food processor, and blitz until well chopped. Add the fresh greens to the sauce and mix well.

Add drained pasta and mix well.

Serve warm and enjoy!
