Caprese Stuffed Avocados

Ingredients
- 2 avocados cut in half, stone and skin removed
- 1 C salad greens
- 1 C tomato diced
- 1/2 C fresh mozzarella diced
- 2 Tbs basil pesto
- 2 Tbs balsamic reduction balsamic vinegar boiled with tablespoon of sugar until syrup consistency
Instructions

In a bowl combine tomatoes, mozzarella, and pesto. Mix well.

Lay out the salad green, these will be your wrap

Place avocado on top of greens

Top with the tomato mixture and drizzle of the balsamic reduction

Roll the greens and serve.

You can also add bacon, chicken, black beans or shrimp to these wraps to add a little protein
