Rosemary Citrus Chicken and Crispy Seasoned Potatoes

Ingredients
- 1 pound young potatoes cut in quarters
- 1 1/2 pound chicken breasts skinless, boneless
- 2 tablespoons olive oil + more for pan
- 1 lemon
- 8 rosemary sprigs leaves removed and minced (1 tbs dried)
- 1/2 teaspoon tarragon
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions

Preheat oven to 415* F and grease with olive oil.

In a medium bowl, mix together the olive oil, juice and zest of lemon, minced rosemary, garlic powder, onion powder, salt and pepper.

Add the potatoes to the bowl, toss in the bowl until the potatoes are coated. Pour them out onto the sheet pan and spread them towards the outside of the pan.

Add the chicken to the same bowl, toss and lay into the middle of the sheet pan, add the lemons to the pan.

Place the pan in the oven. Bake for about 20 minutes stirring the potatoes and rotating the pan half way through. The chicken should register 160* and the potatoes crispy.

Remove from oven and serve immediately.
