We all find ourselves cooking more at home and in search of new recipes. Something different and delicious! Here is something that is super easy and also will please all the palettes at the table!

Italian Chicken Rolls

Ingredients

  • 4 boneless skinless chicken breasts
  • 12 peperoni slices
  • 8 slices of mozzarella cheese
  • 1/2 C shredded Mozzarella
  • 15 oz marinara sauce

Instructions

  1. Grease a deep baking sheet
  2. Preheat the oven to 350°
  3. Using a sharp knife butterfly the chicken breasts: Place hand on top of chicken and hold chicken firmly to the cutting board. Slice chicken breast down the middle without cutting completely through.
  4. Open chicken and spread 2 tbs of sauce, layer with cheese and peperoni.
  5. Roll and secure with a toothpick
  6. Place on prepared baking sheet and cover with remaining sauce

  7. Bake 35 minutes remove from oven and sprinkle with shredded cheese. Place back in oven and cook for another 10 minutes or until the chicken is 160 degrees

  8. Serve and enjoy!
