This recipe turns heads and lights up the senses. Plus it looks much more challenging to make then it actually is. This delicious soup makes a great dinner, starter, lunch and a fantastic way to impress dinner guests.
Spicy Chicken Noodle Soup

Cook Time 25 minutes
Total Time 40 minutes
Ingredients
- 4 1/2 C water
- 1 – 2 chicken breasts you can also use 3-5 thighs you just have to de-bone them after boiling
- Salt and pepper
- 1/2 C carrot grated (about 1 medium carrot)
- 1/2 C snow peas thinly sliced
- 1-3 Tbs Sriracha
- 4 Tbs soy sauce
- 1 tsp Thai red curry paste
- 1 small (about 2 incpiece of fresh ginger peeled and grated
- 3 ounces uncooked wide rice noodles
- 1 Tbs fresh lime juice
- 1/4 C chopped fresh mint cilantro and green onion for garnish
Instructions

In a medium sauce pan bring to boil the water, chicken, 1/2 of the soy sauce, ginger and salt and pepper.

Allow chicken to cook for about 10 minutes or until the chicken internal temperature reads 160*F.

Remove the chicken and set aside

Add the carrots, snow peas, sriracha, remaining soy sauce, and curry paste.

Once the broth has began to boil again add the noodles.

While that is cooking using two forks pull apart the chicken, shredding it into small pieces.

Add the chicken back to the soup.

Remove from heat.

Top each bowl with the fresh herbs and serve right away.
