These delicious noodles are great as a meal, side dish or perfect potluck additions, and they are not the same old noodle salad. This can be served warm or cold and travels well.
Creamy Chipotle Pasta

Ingredients
- 1 12 oz box of rotini
- 2 cups salsa
- 1 cup plain yogurt
- 1 cup finely shredded cheddar cheese
- 1 7 oz can chipotle pepper in sauce, finely diced
- 1 can 1.5 cups black beans, Rinsed
- 2 cups frozen corn
- 1/2 Fresh Avocado diced
Instructions

Cook noodles as per their instructions.

Meanwhile, stir together the salsa, yogurt, cheese, and chopped chipotle.

Once the pasta is cooked, drain and put back in pan adding the black beans and frozen corn.

Pour the sauce over to cook until corn has warmed.

Pour into a large bowl and top with avocado.
