When you are left with chicken leftovers, or are need for something different then the same old PPJ, here is a sandwich packed with flavor and is delicious! Plus you can make it ahead and keep it in a sealed container in the fridge for 5-6 days.
Greek Chicken Salad Sandwich

Ingredients
- 2 C leftover chicken substitute canned chicken or one large chicken breast boiled and shredded
- 1/2 C diced red onion
- 1/2 C diced apple
- 1/2 C grapes halved
- 1/4 C dried cranberries
- 1/4 C slivered almonds optional
- 1/2 C plain Greek yogurt
- 1 tbsp freshly squeezed lemon juice or more, to taste
- 1 sm garlic clove small diced
- salt and pepper to taste
- Bread
- lettuce
Instructions

In a large bowl, combine chicken, red onion, apple, grapes, dried cranberries, sliced almonds, Greek yogurt, lemon juice, garlic, salt and pepper. Mix well.

Serve sandwiches on bread with chicken mixture and lettuce.
