A Better Grilled Cheese

Ingredients
- 1 sm red onion sliced
- 1 large garlic clove minced
- 1 cup 4 ounces shredded sharp white cheddar cheese
- 8 1 1/2-ounce slices hearty wheat bread
- 2 cups fresh spinach leaves
- 8 1/4-inch-thick slices tomato
- 6 slices center-cut bacon
- Softened butter

Heat oven to 350* F and cook bacon 8-15 min

Meanwhile, Heat a large nonstick skillet over medium-low heat. Add a little butter, onion and garlic cooking for about 10 minutes or until onions are tender and golden brown, stirring occasionally. Once cooked remove from heat.

Build your sandwich. Butter two pieces of bread placing one butter side down on a place, then add a small amount of cheese, followed by spinach, tomatoes, bacon, onion, garlic and then more cheese. Top with a slice of bread, butter side up. Build all four sandwiches and return the empty skillet to medium heat.

Place the sandwiches in pan, and cook for 3 minutes on each side or until golden brown and cheese has melted.
