These muffins are simple and delicious! There is little work into the prep so they come together very quickly and the topping is a sweet way to make them stand out against other muffins!

Ingredients

  • 1/3 C butter melted
  • 1/2 C sugar
  • 1 egg @ room temperature
  • 1 1/2 C all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 C milk

Topping

  • 1/4 C sugar
  • 1/4 C oatmeal
  • 1/2 C butter melted
  • 1 tsp. cinnamon

Instructions

  1. Preheat oven to 350F.
  2. Line a muffin tin with paper or butter and flour it.
  3. In a large bowl, sift together the dry ingredients.
  4. In a separate bowl combine the wet ingredients
  5. Add the wet ingredients to the dry stirring just until combined, but it will still be a bit lumpy. Scoop batter into the prepared muffin tins
  6. For the topping: Mix sugar, oatmeal, cinnamon and melted butter in a small bowl. Spoon a small amount on top of each muffin.
  7. Bake for 20-25 minutes, or until they just start to turn a bit golden at the edges.
