Ingredients

  • 2 Lg potatoes , shredded
  • 8 Lg Eggs
  • Cooking spray
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°.
  2. Spray a small muffin tin (8 muffins) with cooking spray, coating it well.
  3. spoon about a 1/4 cup shredded potatoes into each muffin cup, pressing them into the bottom and up sides of muffin cup creating the basket.
  4. Bake for 30 minutes and remove from oven.
  5. Add 1 egg into each basket. Returning to the oven and continue baking 8-10 minutes or until eggs are set to your liking. 8-10 for runny eggs and 10-12 for firm.
  6. Allow to cool for a few minutes before removing from the muffin tin.
  7. Sprinkle with salt and pepper to finish.
  8. Serve and Enjoy!
