Ingredients
- 2 Lg potatoes , shredded
- 8 Lg Eggs
- Cooking spray
- Salt and pepper to taste
Instructions

Preheat oven to 400°.

Spray a small muffin tin (8 muffins) with cooking spray, coating it well.

spoon about a 1/4 cup shredded potatoes into each muffin cup, pressing them into the bottom and up sides of muffin cup creating the basket.

Bake for 30 minutes and remove from oven.

Add 1 egg into each basket. Returning to the oven and continue baking 8-10 minutes or until eggs are set to your liking. 8-10 for runny eggs and 10-12 for firm.

Allow to cool for a few minutes before removing from the muffin tin.

Sprinkle with salt and pepper to finish.
