Simple and about as nutrient dense as you can get.  These breakfast bell peppers are quick to put together and delicious.

Ingredients

  • red bell pepper
  • 16 oz  frozen chopped spinach
  • eggs
  • pepper
  • sea salt

Instructions

  1. Preheat oven to 400F. Line a baking dish with foil.
  2. Cut off the top of each pepper, and remove the seeds.
  3. Defrost the spinach. Using a clean kitchen towle squeeze the moisture out of the spinach.
  4. Stuff the bottoms of the peppers evenly with the defrosted spinach.
  5. Crack an egg into the top ½ of each pepper.
  6. Bake for about 15-20 minutes or until the egg whites are set and not transparent.
  7. Serve and enjoy!
