Here is a healthier take on potato skins but still just as delicious.

BAKED POTATO BITES

Ingredients

  • 9 small yellow potatoes
  • 2 tsp olive oil
  • salt and pepper to taste
  • 1 slice of bacon
  • 8 oz Asparagus tops
  • 4 oz Shredded Cheese
  • 4 and 1/2 tsp sour cream

Instructions

  1. Preheat the oven to 450ºF.
  2. Line a 9×13 cake pan with foil
  3. Cut the potatoes in half lengthwise and toss them with 1 teaspoon of the olive oil, salt and pepper.
  4. Place the potatoes to one side of the pan cut side up. Lay the slice of bacon along the other side of the pan.
  5. Roast until the potatoes are tender, about 15 minutes. Keep an eye on the bacon removing it when it is crispy.
  6. Toss the asparagus with the remaining teaspoon of olive oil, and lightly salt and pepper. Put the spears on a baking sheet and cook for about 4 minutes or until bright green.
  7. Chop up the bacon.
  8. Top potatoes with asparagus, bacon, and shredded cheese. Place back in oven to melt the cheese, 3-5 minutes.
  9. Place potatoes on a serving plate and top each one with a small dollop of sour cream.
  10. Serve and Enjoy!
